Busy Mom’s Cooking Hacks: 5 Unbelievably Easy Crock Pot Foodie Meals PLUS Bonus Reader Recipe

mom

It’s days like this that make me want to kiss my crock pot on the mouf. My crock pot is ever so faithful. My crock pot never lets me down. My crock pot doesn’t complain about the food that I make and then throw it on the floor within the first five minutes of dinner.

The cool thing about crock pots is that they can be used for almost anything if you can find a recipe for it on the vast Internet. Since being a foodie has become a thing, I thought to myself, I bet I could make some really bomb ass shit for a fancy dinner party in my CROCK POT.

And I was right. On top of that, one of our lovely readers submitted a fancy-delicious-easy recipe that goes perfectly with a five star crock pot dinner. Behold, crock pot foodie meals made easy:

I like to think that fancy people throwing fancy parties always say “bomb ass shit” when referring to their fancy dinner menus.

I believe you’re correct with one exception: in the south, it’s “bomb ass shit, y’all” but the “shit y’all” is pronounced like “shit chy’all”.
        You’re welcome.

    • Megan Zander

My crockpot is named Myrtle. We’re likethis. She’s making sausage and meatballs for us right now. It’s not actually like having a personal chef, but kinda sorta.

      • http://www.twitter.com/ohladyjayne allisonjayne

Ha. I’m glad I am not the only one who names their appliances. We got a robot mop for xmas and her name is Gigi The Hockey Stick (Gigi was my idea, then my kid added “the hockey stick”).

      • Megan Zander

And I’m glad we aren’t the only ones who get cleaning appliances for Christmas. I love my shark vac.

      • Natasha B

Ours is named ‘mop’ as in ‘mop’ from WallE :)
And the iRobots are Eva and WallE lol

      • Rachel Sea

I had no idea there was such a thing. You have just changed my life.

      • http://www.twitter.com/ohladyjayne allisonjayne

        It’s an iRobot. I think it’s this one: http://www.thesource.ca/estore/product.aspx?product=8018440&language=en-CA&utm_source=pla&utm_medium=pla&utm_campaign=adchemix-pla&gclid=CKrz2tT61b0CFe5aMgodWzsAoA
I do love it. It obviously doesn’t do great at things like 3-day old spaghetti sauce, you still have to scrub at that, but for day-to-day clean up, it does a really good job.

Mine is named Regis! I have no idea why.

      • Valerie

Ummm because Regis is the shit? And so are crockpots?

How did you know I usually do my menu planning on Wednesdays? #AreYouStalkingMe

I love the way you did your hair today…

      • Kay_Sue

Messy ponytail = classic mom hair.

      • Megan Zander

I’m in awe right now, even the THOUGHT of doing a week of menu planning in the middle of the week is making my OCD alarm buzz. Its like you’re coal walking/lion taming/ standing up to your MIL/ insert act of valor here.

      • Kay_Sue

Payday is Thursday, so our weeks are weird, lol. That’s when we do our grocery shopping since it also is usually my husband’s day off, meaning I can either pawn the kids off or make him come with me to help wrangle. ;)

Not fancy, but my staples are crock pot chili and crock pot corned beef. Anything with beef and cream of mushroom w/garlic condensed soup is pretty boss, too.

    • Natasha B

I feel like I should name my crockpot now….there’s a super fatty chuck roast in there with some chipotle peppers and garlic for fajita night.
Also-anything with sriracha is a WIN

      • Hibbie

That sounds awesome! I never thought of using the crock pot for fajitas, but that’s a great idea.

      • Natasha B

It’s realllly good. A pork butt with chipotle, orAnges, cloves and garlic makes excellent carnitas also. We like meat haha

I’m so happy to have stumbled upon these crockpot delights : ) My thanks to Bethany for posting my recipe. Can’t wait to share this link with Nana’s Kitchen Facebook friends @ https://www.facebook.com/nananetwork. I’m going to try experimenting with a “blendable-but-commendable” pea soup next, that can be made from Green Giant canned peas…let’s hope the best thing about it isn’t the BoxTop for Education!

      • Bethany Ramos

Thank you again for the great recipe!

My MIL just got us this slow cooker cookbook (it’s America’s Test Kitchen, which I love). She helped out for about a week when the baby was born and she made one of the beef stew recipes from it, tomorrow night we’re making the braised steaks with mushrooms and onions. I also want to make their broccoli-Parmesan mac n cheese, and rice with chicken, feta, and spinach. There are some dessert recipes, of which I want to make the lemon pudding cake. She made a lemon pudding cake while she was here, but idk if it’s from this book. Either way, it was nomtastic and I am all about desserts.

Pressure cookers are awesome for busy people also. I do chicken breasts in mine. Takes a whole 6 minutes and that includes the pressurising. It’s gets them just underdone so then I can freeze them and use them in pastas, stir frys and on pizzas. Quinoa and rice in minutes. Love it. Plus I don’t have to worry about my slow cooker burning the house down cuz I’m weird like that

      Apostrophe of death!

    • SunnyD847

Hacks should be plural, not possessive! Please remove the unnecessary apostrophe, it’s driving me crazy!

      • Bethany Ramos

UGH – I apologize and agree – not sure how that slipped through my brain. Thank you!

ETA: Good news, that was a one-time error in the title. I seriously hate errors like that. :)

I made Ropa Vieja in my slow cooker a few weeks ago. It was AMAZE-BALLS. The hardest part was not eating it while it cooked for 6 hours smelling utterly delicious.

We just had BBQ pulled pork from the freezer tonight– it’s the perfect crock pot recipe: it takes about 3 minutes to throw together in the morning (4 ingredients, not counting salt, pepper, or water); it doesn’t use canned soup or packaged ranch dressing mix; it cooks for 8-10 hours, so you can be gone all day; it makes a ton, and costs about $20 for the whole recipe; it freezes beautifully. Because it’s so easy to make, I usually take the extra step of making homemade BBQ sauce, but store-bought sauce is fine, too.
